Honorary Dish of the Day: Closing out our week with this sumptuous Moroccan Couscous & Spinach Medley as our honorary dish of the day today! This is an entirely new recipe I decided to make for dinner recently, and I am so happy that the flavors blended so beautifully well! I have to admit I used to be a bit apprehensive about cooking Moroccan-style couscous since I hadn't quite grasped the technique for making it. Over time, however, I have learned how to make it just right so it comes out nice, light, and fluffy. This unique variety of couscous is now one of my favorite go-to quick alternatives to rice and pasta. One thing I love about it is that it literally cooks in a matter of seconds! For this recipe, I first boiled 2 cups of water in a cooking pot under high heat and added 1 tablespoon of olive oil and salt to taste. I then slowly poured in 1 cup of couscous slowly while stirring vigorously and lowered the heat to medium. The couscous absorbs the liquid at lightening speed, so I removed the pot from the stove after a mere 1 minute and covered it with a ld to let the couscous continue to steam and cook through completely without any additional direct heat. I then sautéed 1 bag of thawed frozen spinach in a large skillet with some olive oil, diced red onions, and tomatoes. I seasoned it with black pepper, paprika, turmeric powder, cumin, and some salt to taste let it simmer for about 7 minuted under medium heat before finally adding in the cooked couscous and mixing well to blend with the spinach. This dish can be served hot or warm - I served mine at room temperature with a hot serving of my hearty One-Pan Roast Chicken & Vegetables signature dish as highlighted by the professionally plated dish above for a satisfying and delicious dinner 😋.
