Honorary Dish of the Day: Simple Veggie Omelette
Honorary Dish of the Day: We're keeping it simple today with this delicious Veggie Omelette! This quick and easy egg dish is perfect for breakfast or brunch and can be eaten with toast or upgraded into a sandwich filling for a light but satisfying daytime meal. I love omelettes as they are not only very easy to prepare but can also be paired with an incredible range of vegetables and cheeses. For this omelette recipe, I simply cracked two eggs and seasoned with a pinch of salt, smoked paprika, and ground black pepper. I then poured the egg mixture in to a hot frying pan coated with some extra virgin olive oil then added chopped baby spinach and red tomato slices to the upward-facing side of the omelette. Pro tip - there's no need to turn it over as it cooks through beautifully well on both sides, but if you would like to cook the veggies a little bit more you can definitely flip it and let it brown a little on the other side as well. I love that this non-flipped omelette almost resembles a tiny homemade pizza...we'll call it an egg pizza 😁. I let this cook for about 3 minutes before serving hot with a side of whole wheat toast. Simple, easy, and delicious...Enjoy!
