Honorary Dish of the Day: We are rounding out our week with this absolutely delicious Spinach & Sausage Hash Scramble as our honorary dish of the day today! Yes, it is just as yummy as it looks in the photo 😋. This heavenly dish is perfect for breakfast or brunch and pairs well with some toast, pancakes, or waffles. It is pretty much a sweet amalgamation of all my favorite brunch bites put together...what could be better than that? I love to drizzle mine with some ketchup as well which adds a sweet and tangy flavor that perfectly completes and complements the scramble. For this recipe, I used some extra virgin olive, white onions, tomatoes, chicken sausage, potato hash, and baby spinach all seasoned with some salt, ground black pepper, and smoked paprika. It's a very simple and straightforward recipe that rewards you with a flavorful and absolutely out-of-this-world delicious dish!
