Honorary Dish of the Day: Delicious Mung Bean & Radish Soup

Honorary Dish of the Day: Happy Thursday everyone! I am incredibly excited to introduce this spectacular Mung Bean & Radish Soup as our honorary dish of the day today 😋. Mung beans, also known as green grams, are part of the extensive legume family and come loaded with a host of nutrients and health benefits. Dried mung beans always reminds me of home back in Kenya since I grew up eating them often as a stew paired with rice for lunch. They are popularly known as "ndengu" in my home country and definitely make a great alternative to beans, which are also a major staple food for many families in the country. 

While they are not quite as popular in the Western Hemisphere, I think many people are missing out on this absolutely amazing and highly nutritious dish. This legume is super versatile as it can be added to a wide range of recipes and its delicate flavor makes it such a unique addition to any lunch or dinner menu. And to top off all these mind-blowing qualities is the fact that mung beans are very easy to prepare - you don't need to pre-soak them before cooking and they only boil in a matter of minutes! 

This soup was an entirely new recipe I developed after I decided to try a vegetable that I have never used before in my cooking - the deliciously crunchy radish. Inexplicably, this root vegetable has most recently captivated me and truly captured my imagination, so you will likely see it feature prominently in many upcoming recipes 😁. I am so glad that it ultimately paired so beautifully with the mung beans and did not overpower the main star of this dish. As shown in the picture I took above, I also garnished the soup with some thin radish and avocado slices to complete the authentically heart-warming dinner meal.
