Signature Dish of the Day: Serving up this bright and tasty Pan-Roasted Acorn Squash as our signature dish of the day today! There is something about roasting that seems to bring out the best flavor in foods, especially starchy vegetables like squashes, potatoes, and even carrots. Acorn squash has quickly become one of my favorite squash types - I find it sweeter and more flavorful compared to butternut squash. Although they are smaller in size, sometimes smaller really is better and tastier too 😁. While I would allow about 10 minutes of prep time to cut up the squash itself, this dish took a mere 30 minutes to cook and turned into such a wonderful and absolutely delicious side dinner side dish. After slicing a medium-sized acorn squash into small cubes as shown above, I placed them on a small flat baking pan and seasoned with about 1 teaspoon each of salt, ground black pepper, smoked paprika, and turmeric. I then roasted the squash at 375℉ for 30 minutes. Quick and simple recipe that yields a delightfully scrumptious and healthy side dish. Serve hot with some stew or vegetables for a hearty dinner meal. Enjoy!
