Signature Dish of the Day: Vegetable Basmati Rice Medley

Signature Dish of the Day: Our signature dish of the day today, this beautiful and vibrant Vegetable Basmati Rice Medley, is a different take on my previous basmati rice medley recipe. I can never get enough of this Trader Joe's rice brand and I'm always looking for ways to up the ante and create new recipes. I can 100% guarantee...you will most likely never go back to eating plain, boring white rice after you try this elevated dish! For this particular recipe, I used a medium-sized cooking pot as shown in the picture below and first sautéed some diced red onions in a mix of about 2 tablespoons of extra virgin olive and 1 tablespoon of coconut oil. I then added a handful of chopped tomatoes and julienned sweet mini red peppers and seasoned this base mixture with 1 teaspoon each of ground black pepper, paprika, and turmeric. I then stirred in 1 cup of my basmati rice and mixed to blend all ingredients thoroughly before adding 2 cups of cold water. I then seasoned with some salt to taste, stirred the mixture, and reduced the heat to medium. I left the rice to work its magic for about 15 minutes before covering towards the end of the cooking process and reducing the heat to low until all the water was completely absorbed. This is a super simple recipe that will reward you with a deliciously indulgent meal. Give it a try sometime and enjoy! 😋
