Signature Dish of the Day: Our signature dish of the day today is this wonderfully colorful and delicious Warm Beet & Spinach Salad which was entirely the magical result of a recent culinary experiment! I seem to have developed a sudden, unexplained craving for beets lately and since I had some extra ones just lying around in my fridge waiting to be transformed into something useful, I decided to make an attempt at making a whole new dish using the beets as the star component. I prepared this dish by first slicing 3 medium-sized beet roots into large julienne strips as shown in the picture above. I then very lightly boiled them in a small skillet with about 1/4 cup of water and added about 1 tablespoon of organic coconut vinegar as my pickling element to add that unique sweet and tangy flavor to the beets. I let the beets cook under medium heat for about 10 minutes until all the water was fully absorbed before removing them from the stove. In a separate skillet, I sautéed about 1 cup of washed baby spinach with some extra virgin olive oil under medium heat for about 5 minutes. I then tossed in the cooked beets, seasoned the mixture with some salt and ground black pepper, and stirred thoroughly to blend all the ingredients together for about 1 minute before turning off the stove. I served this beautiful combination warm as a side dish with my chiocciole signature pasta dish and it was absolutely delicious!
