Honorary Dish of the Day: Avocado French Toast
Honorary Dish of the Day: Closing out what has been an incredibly short month of April with this delightful Avocado French Toast as our honorary dish of the day today! This dish is a uniquely delicious combination that I randomly developed recently to bring together two classic breakfast/brunch favorites. I love French Toast, and I also love the now-trendy Avocado Toast...so I randomly thought, why not create a mash-up of these two lovely dishes? This dish is the product of that random thought experiment, and I am happy to report that it turned out to be such a winning combination π! It's safe to say that it is truly a marriage made in culinary heaven π.
While this particular recipe is very simple and straightforward, I believe it offers unlimited room for creativity in terms of toppings and accompaniments. Since this was my first time trying this out, I used very basic ingredients to avoid inadvertently mixing too many different flavors together all at once. However, I do look forward to experimenting with new toppings the next time I decide to make this dish again. To create the French toast, I first created my custard using 4 eggs, 1 cup of whole milk, 1 teaspoon of cinnamon, 1 teaspoon of pumpkin spice, 1/4 teaspoon of salt, 1 teaspoon of dry parsley flakes, and just a handful of shredded cheddar cheese for a unique flavor twist. I used thick pieces of homemade bread but any bread of choice can be substituted here. I let each piece soak up the custard for about 3 minutes on each side before lightly pan-frying with butter in a large skillet for roughly 5 minutes on each side (and about 1 minute each on the smaller sides) under medium-low heat. Controlling the heat is critical for achieving even browning and also helps prevent smoking/burning for this step.
For the avocado topping, I cut two ripe avocados and scooped the flesh out into a small bowl. I then seasoned it generously with some ground black pepper and a dash of salt before drizzling the juice of half a lemon to prevent browning. To assemble the finished product, simply scoop out sizable chunks of the avocado mixture onto each completed French toast, spread it out as evenly as possible, and garnish with some ground black pepper (personal preference) as shown in the picture above. Simple, flavorful, and truly satisfying...this mash-up will undoubtedly elevate your weekend brunch to a whole new level. Enjoy! πππ
